The long version

Ninety years of
one small cake

Of everything here, the cake changed least. What changed was who made it, how far it travelled, and what else was on the counter next to it.

The beginning · one shop at a time

Handmade, one shop at a time

In the beginning a shop owned its own molds and its own recipe. Batter was mixed by hand each morning, red bean was the only filling worth the trouble, and the cake was sold within walking distance of where it was baked. Quality was whatever that particular baker was having that day.

The expressway years

The job it held for decades

As Korea's expressway network filled in, hodu-gwaja found the job it would hold for decades: the thing you buy at a rest stop for the people at home. Volume went up, molds got bigger and mechanical, and the cake became a souvenir more than a dessert.

Selling by the bag

Selling by the bag has a ceiling

The cake was as good as it had ever been. What ran out was the way it was sold: if every bag is the same, the only lever left is price, and nothing on the counter gives anyone a reason to choose one shop over another. Meanwhile Korean dessert culture moved on to cafés, seasonal menus and things worth photographing.

What we changed

The filling became the product

Nine fillings instead of one, developed with regional Korean ingredients — Ganghwa mugwort, Goheung yuzu and Ongjin sweet potato among them. Batter and filling are made at a HACCP-certified facility and held at −18°C; the store bakes to order in about three minutes. Drinks, bungeoppang, ice cream and seasonal desserts sit around the cake, so there is a reason to sit down — and Ang-i, the character, runs across packaging, goods and the interior.

What actually changed

At the centre it is still the same idea: a walnut-shaped shell, a filling, a piece of walnut. Five things around it are not.

What did not change

The mold is still walnut-shaped. There is still a piece of walnut inside. It is still handed over hot, in paper. A cake that survived ninety years of Korean snack culture did not need rescuing — it needed a reason to be chosen.
